Quail & Condor

James Beard Semifinalist 2025 | Healdsburg, CA

Quail & Condor is a small bakery that combines expert baking with thoughtful sourcing. Melissa Yanc and Sean McGaughey are a husband-and-wife team, with Sean as a former Head Chef at the renowned three-Michelin-starred SingleThread. They launched this Healdsburg favorite as a pandemic pop-up in 2020, then grew into a beloved brick-and-mortar. The bakery is known for its dedication to the slow food movement, and in 2021 received the Snail of Approval from Slow Food in Sonoma County, recognizing exceptional sourcing, environmental impact, community involvement, and business values. Each loaf and pastry is made with care through long fermentation, highlighting the unique flavors of Sonoma County’s heritage grains.

The Sustainability Print:

At Quail & Condor, sustainability is part of everyday life. Through their relationships with local farmers, they source top-notch Sonoma County ingredients while committing to sustainable practices that minimize waste and reduce environmental impact. They pack their products thoughtfully, and their approach to long fermentation not only builds flavor but also extends shelf life, reducing food waste.

A Study in Sourcing: The Farmers’ Market Network

The bakery uses ingredients from some of the region’s most respected producers. By staying on a first-name basis with their suppliers, they make sure every pastry matches the real seasons of the North Bay.

The Grains:

They prioritize locally milled, premium grains that support soil health and regional biodiversity, the foundation of their crackly, tangy sourdough and flaky laminated pastries.

The Produce Guild:

Their rotating seasonal menu is driven by a “booth-neighbor” philosophy, sourcing directly from local Sonoma County farmers whose growing seasons define what ends up on the counter each week.

Ethical Dairy:

From the high-quality butter in their croissants to the rich fillings in their pastries, every component is sourced with care and mindful provenance from regional producers.

Insights

Quail & Condor stands out for its “Community-First Gastronomy.” As a 2025 James Beard Semifinalist for Outstanding Bakery and named one of America’s best bakeries by The New York Times, Yanc and McGaughey prove that national recognition and small-town roots aren’t in conflict. They upcycle extra bread into new treats, champion the Slow Food movement, and are now expanding to a larger space to serve even more of the Healdsburg community. A local bakery driving real environmental and social change, one loaf at a time.
