Caruso’s sits right above the Pacific, giving diners the feeling of being on an elegant yacht, but its focus stays true to the Central Coast. Chef Massimo Falsini has built a menu highlighting local ingredients and sourcing from local farmers, foragers, and fishermen. Caruso’s is also one of the few restaurants worldwide to earn a 3-star rating from the Sustainable Restaurant Association (SRA), a tough UK-based certification that reviews everything from supply chains to employee fairness.

Caruso’s follows a strict “Hyper-Local” rule. Chef Falsini is known for taking dishes off the menu during service if the local catch isn’t available.

Carbon Reach: Low:

About 90% of the seafood comes from local divers and fishers, including the well-known Stephanie Mutz. By choosing local, less popular species like Pacific rockfish and black cod instead of more famous fish, they help take pressure off overfished stocks.

Caruso’s works with the California Wheat Commission to use only heritage grains grown in the state for its pastas and breads, which helps support local soil health.

Circular Economy: High. Zero Plastic:

The restaurant has a strict policy against single-use plastics, opting for recycled or reusable materials throughout the dining room.  Even the menus are sustainable—they’re printed on Crush paper made from food waste like grape skins and coffee bean husks.

Caruso’s stands out for using advanced technology to reduce its “Blue Footprint.”

Zero food waste:

Caruso’s uses an LFC biodigester. This machine breaks down food scraps on-site and turns them into greywater, which can be safely disposed of without the carbon impact of hauling waste away. The restaurant keeps a close track of its carbon footprint and aims to reach net-zero emissions in the long run. They also use electric cars to transport guests and have beehives on-site to help local biodiversity.

Caruso’s shows a strong commitment to sustainability by working directly with Vega Winery & Farm and local Montecito orchards, keeping a close connection to its ingredients. Its 3-star SRA rating is rare for a U.S. restaurant and highlights its global recognition. While Michelin is still the top standard for food, the SRA rating proves that Caruso’s operations are just as impressive.
