The team is deepening its commitment to sourcing from local, sustainable, and organic farms, visiting partners on-site to learn about the people and processes behind their ingredients. The kitchen works to use every part of each ingredient, turning what might otherwise be discarded into creative components that appear throughout the menu.

A Study in Sourcing: The West Coast Collective

The menu is built on meaningful relationships with California’s most respected producers.

Produce:

The kitchen sources from local, sustainable, and organic farms in North County and Southern California. Partners include SeaGreens, a North County urban organic microgreens farm cultivated with care and intention, and Girl & Dug Farm in San Marcos, known for growing rare and heritage varieties prized by Michelin-starred chefs.

Proteins:

Lone Mountain beef appears on the menu, and the kitchen’s philosophy centers on whole-animal sourcing and in-house butchery, ensuring every part of the animal is honored and used.

Seafood:

The restaurant prioritizes seafood from sustainable California sources, with Morro Bay oysters featured in Chef Bost’s cooking across his restaurants.

Zero-Waste Approach:

Vegetable scraps, bones, and fats are repurposed throughout the kitchen into stocks, sauces, and staff meals rather than going to landfill.
