The restaurant is a Certified Carbon Neutral business via Zero Foodprint, operates a regenerative seed-to-compost system, and sources the vast majority of its food from its own farm and the surrounding region. While its core menu has minimal food miles, the restaurant deliberately accepts a “carbon bridge” by importing select high-impact ingredients, such as Japanese uni and sake and elite European wines, to preserve culinary and cultural authenticity.
